Considered by many to be the most complex and sophisticated cured product ever created, its prestige is internationally recognized.

The origin: a unique animal in a unique territory

It all begins with the Iberian pig, an indigenous breed from the Iberian Peninsula with origins dating back to prehistory.

Over thousands of years, this animal has adapted to a unique ecosystem: the "montado" — a landscape of holm oaks and cork oaks typical of the southwestern Iberian Peninsula, shared between Portugal and Spain.

This natural system is one of Europe's richest in biodiversity.
And the Iberian pig is not just a part of it — it is an essential element of its balance.

The "montanheira": the heart of the process

Between October and March, a crucial phase takes place: the montanheira.

During this period, Iberian pigs live freely in the montado, feeding on:

  • acorns
  • natural grasses
  • spontaneous resources from the ecosystem

A single animal can travel up to 14 km per day and consume between 6 to 10 kg of acorns daily.

This lifestyle has a direct impact on meat quality:

The curing: when time defines excellence

  • Salting — the legs are covered with salt for 1 to 2 weeks
  • Washing and drying — removal of excess salt and beginning of dehydration
  • Secadero — natural drying in a ventilated environment
  • Bodega — slow maturation in cellars, where deep biochemical transformations occur

During this phase, natural enzymes break down proteins and fats, creating hundreds of aromatic compounds.

How long does it take?

  • Iberian acorn-fed ham: minimum 36 months

This extended time is what allows for levels of complexity impossible to accelerate.
